Tuna Or Salmon Macaroni Salad
- 1 C. elbow macaroni, cooked pkg. directions
- 1 C. cucumber, chopped'
- 1/2 small onion, finely chopped
- 1/2 tsp. salt
- 1/2 tsp. freshly ground pepper
- 1 can Deming's Red Sockeye Salmon, or 2 cans tuna fish
- red and green peppers, chopped small
- 2 stalks celery, chopped
- lettuce, washed and sliced
- 2 tomatoes, cut in wedges
- Dressing:
- 1/2 C. mayonnaise
- 1/4 C. sour cream
- 1/8 tsp. creamy horseradish
- 1/4 tsp. basil
- 1/4 tsp. dill weed
- Cook macaroni according to pkg. directions. Rinse and drain under cold water. Mix ingredients except tomatoes and lettuce. Cover and refrigerate at least 1 hour. Spoon on lettuce leaves. Garnish with tomato wedges.
