Spinach Feta Gratin

  1. In a large saucepan cook the spinach in the water clinging to the leaves, covered over moderately high heat for 3 to 5 minutes or until it is wilted, and drain it well. In a bowl combine the spinach, the feta cheese the egg the oregano the lemon juice 1 1/2 tablespoons of the ground crackers and pepper to taste and spoon mixture into a buttered shallow 2 cup baking dish. In a small bowl combine well the remaining ground crackers with the butter sprinkle the cracker topping over the spinach mixture and bake the gratin in the middle of a preheated 450 degree oven for 15 minutes or until the top is golden.
