Buttermilk Corn Bread
- 1/2 cup plain flour
- 1/2 teaspoon soda
- 11/2 teaspoons double-acting baking powder
- 1 tablespoon sugar
- 1 teaspoon salt
- 11/2 cup yellow or white corn meal
- 1 cup buttermilk
- 2 eggs
- 3 to 4 tablespoons cooking oil (I use olive oil)
- Preheat oven to 425 deg.
- If using iron skillet, grease and preheat for two minutes in hot oven before pouring in batter.
- Have all ingredients at room temperature (about 75 deg.)
- Combine
- 1/2 cup plain flour
- 1/2 teaspoon soda
- 11/2 teaspoons double-acting baking powder
- 1 tablespoon sugar
- 1 teaspoon salt
- 11/2 cup yellow or white corn meal
- Combine and beat:
- 1 cup buttermilk
- 2 eggs
- 3 to 4 tablespoons melted butter or oil (I use olive oil)
- Stir the liquid into the dry ingredients with a few swift strokes.
- Pour batter into a greased 9X9 inch pan, baking dish, or 10 1/2 inch (preheated) iron skillet and bake for about 1/2 hour.
