Buttermilk Corn Bread

  1. Preheat oven to 425 deg.
  2. If using iron skillet, grease and preheat for two minutes in hot oven before pouring in batter.
  3. Have all ingredients at room temperature (about 75 deg.)
  4. Combine
  5. 1/2 cup plain flour
  6. 1/2 teaspoon soda
  7. 11/2 teaspoons double-acting baking powder
  8. 1 tablespoon sugar
  9. 1 teaspoon salt
  10. 11/2 cup yellow or white corn meal
  11. Combine and beat:
  12. 1 cup buttermilk
  13. 2 eggs
  14. 3 to 4 tablespoons melted butter or oil (I use olive oil)
  15. Stir the liquid into the dry ingredients with a few swift strokes.
  16. Pour batter into a greased 9X9 inch pan, baking dish, or 10 1/2 inch (preheated) iron skillet and bake for about 1/2 hour.
