Baked Chicken Parmesan
- 3 chickens, cut into serving pieces
- 4 1/2 c. fresh bread crumbs
- 1 1/4 c. grated Parmesan cheese
- 1 tsp. salt
- 1/3 c. chopped fresh parsley
- 1 1/2 c. butter
- 1 clove garlic, crushed
- 1 Tbsp. Dijon mustard
- 1 1/2 tsp. Worcestershire sauce
- Mix together bread crumbs, cheese, salt and parsley; spread the mixture in a shallow pan.
- In a medium pan melt butter.
- Add garlic, mustard and Worcestershire sauce.
- Stir well and add 6 teaspoons of the butter mixture.
- Cool so that you can dip chicken pieces in to coat well.
- Roll chicken in crumb mixture, ensuring that each piece is well coated.
- Bake in a large shallow pan for 1 1/4 hours at 350u0b0.
- Pour leftover butter mixture over chicken and baste twice during cooking.
