Ostritch Pasta Infused Red Wine And Creme Fraiche.

  1. boil water for tagliatelli,with salt and good olive oil.get strainer ready.cut ostrich in 2cm cubes and set aside.taste the wine and then poor half into a deep pot with season and cumin.let it reduce for 1h30.when your pasta is ready ,strian them and lightly season and a dash of olive oil.add the ostrich,tomtoes hole to your red wine..increase the heat for 5 min before strainig but pouring your semi jus into a nother small pot.reduce and pour over pasta.garnish with creme fresh olive oil and coriander.
