Shrimp And Grits (Wishbone-Chicago)
- Ingredients
- 6 Slices bacon, diced
- 1 pound medium shrimp, peeled
- 2 cups sliced mushrooms
- 1 cups sliced green onions
- 1 large clove garlic, pressed
- 3 teaspoons fresh lemon juice
- Dash hot red pepper sauce
- 2 teaspoons chopped fresh parsley
- Salt, freshly ground pepper to taste
- 1 recipe hot cheese grits, see basic grits recipe
- Cayenne pepper
- Directions
- 1. Fry bacon in large skillet until browned at edges but not too crisp. Drain on paper towels and set aside. Leave fat in skillet.
- 2. Return skillet to medium-high heat. When it is hot, add shrimp and cook until they begin to color. Add mushrooms and cook until they begin to soften, about 4 minutes. Sprinkle with green onions, bacon and garlic. Season with lemon juice, red pepper sauce, parsley, salt and pepper.
- 3. Stir cayenne pepper to taste into the grits.
- Preparation time 25 minutes
- Cooking time 20 minutes
- Yield 4 servings
