Burritos
- 10 medium or large flour tortillas
- oil
- The following can be warm or cold:
- adobo sauce
- shredded chicken
- Refried Beans
- Brick or Jack Cheese
- Optional: red pepper, parsley or cilantro finely chopped
- Salsa
- Set oven at 350 F. Oil 2 baking dishes with sides.
- Heat the tortillas in oil as per instructions on package
- Mix adobo sauce with shredded chicken. Should not be runny. Heat mixture to reduce liquids if too runny.
- Assemble:
- Spoon Refried Beans on heated tortilla.
- Add chicken and adobo sauce mixture. (Can also add chopped red peppers or parsley or cilantro for colour.)
- Put in a piece of cheese (not shredded -- it will cook too fast).
- Roll up and place seam side down in the oiled baking dishes.
- Cover with foil and bake 350 about 1 hour.
- Serve with salsa, guacamole, sour cream.
