Cucumber And Dill Salad
- 8-10 cucumbers, peeled and sliced thin
- 3 large onions, peeled and sliced thin
- Kosher salt
- 2 tablespoons dried dill
- 1/4 cup sugar
- 1/4 cup white vinegar
- 1/2 cup water
- As you peel and slice the cucumbers, place them in a large pot. After you peel 2 cucumbers, sprinkle generously with kosher salt.
- Repeat until all of the cucumbers are peeled and sliced.
- Fill pot with cold water to cover cucumbers and add a tray of ice.
- Stir until ice is melted.
- Drain - cover with water - add ice - stir until ice is melted.
- Drain again.
- Mix together vinegar, water and sugar - taste and add sugar or vinegar to taste (I prefer it on the sweet side)
- Pour over cucumbers - add dill weed and stir until dill is mixed throughout.
- Put into zip loc bag(s) and squeeze air out. Place in refrigerator and let salad sit at least overnight.
