Zippy Corned Beef Salad
- 1 lb. cooked corned beef, cut into cubes
- 5 new red potatoes, boiled, cooled, peeled and cut into cubes
- 2 crisp dill pickles, coarsely chopped
- 3 green onions, finely chopped
- 1 hard egg, chopped
- 5 black olives, chopped
- 2 tsp. Dijon mustard
- 3 Tbsp. olive oil
- 3 Tbsp. vinegar
- 1/4 tsp. garlic powder
- 1/4 tsp. black pepper
- salad greens
- 1/3 c. grated Swiss cheese
- Combine beef, potatoes, pickles, onions, egg and olive.
- In another bowl, combine mustard, oil, vinegar, garlic powder and pepper.
- Pour over beef mixture; toss.
- Cover and refrigerate 8 hours.
- Serve beef mixture on salad greens torn into bite size pieces.
- Sprinkle cheese over top before serving.
