Amber Ale Turkey Chili
- 1 tsp plus 1 tbps olive oil
- 1.5 lb lean ground turkey
- 1 tsp salt
- 1 large onion, chopped
- 4 cloves garlic, finely chopped
- 2 tbsp chili powder
- 2 tsp cumin
- 1 tsp dried oregano
- 1 12oz bottle amber ale
- 1 28oz can crushed tomatoes
- 1 tbsp honey
- 2 tsp minced, canned chipotles in adobo sauce
- 1 15oz can black beans, rinsed and drained
- 1 tbsp fresh lime juice
- sour cream (optional)
- shredded sharp cheddar cheese (optional)
- chopped scallions (optional)
- 1. Heat 1 tsp olive oil in a deep saute pan over medium heat. Add turkey and brown. Transfer to a small bowl, season with salt and set aside.
- 2. Drain pan and add remaining olive oil and onion and saute for 5 min. Add garlic and cook for 1 minute. Stir in chili powder, cumin, and oregano; saute 30 seconds.
- 3. Pour in ale and let simmer 5 minutes. Return turkey to pot and add crushed tomatoes, honey, chipotles, and 1/2 cup water. Reduce heat to medium-low; simmer 1 hour, stirring occasionally.
- 4. Add beans during last 5 minutes of cooking to heat through. Stir in lime juice and serve with toppings.
