Banana Bread

  1. 1. Preheat oven to 350F. Grease a 9x5x3" loaf pan and set aside.
  2. 2. In a large bowl, cream margarine and sugar thoroughly. Beat in apricot jelly and two eggs until mixture is light.
  3. 3. In another bowl, sift together flour, baking powder, baking soda, and salt. Stir dry ingredients into the creamed ingredients alternately with buttermilk.
  4. 4. Stir in mashed bananas and walnuts.
  5. 5. Pour into the prepared pan. Bake for 55 to 60 minutes or until toothpick inserted in center comes out clean.
  6. 6. Remove from pan and cool on rack. Slice to serve.
