Banana Bread
- 1/3 cup margarine
- 1/2 cup sugar
- 2 tsp apricot jelly
- 2eggs
- 2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/3 cup buttermilk
- 1 cup mashed ripe bananas
- 1/2 cup chopped walnuts
- 1. Preheat oven to 350F. Grease a 9x5x3" loaf pan and set aside.
- 2. In a large bowl, cream margarine and sugar thoroughly. Beat in apricot jelly and two eggs until mixture is light.
- 3. In another bowl, sift together flour, baking powder, baking soda, and salt. Stir dry ingredients into the creamed ingredients alternately with buttermilk.
- 4. Stir in mashed bananas and walnuts.
- 5. Pour into the prepared pan. Bake for 55 to 60 minutes or until toothpick inserted in center comes out clean.
- 6. Remove from pan and cool on rack. Slice to serve.
