Farm Fresh Vegetarian Chili
- 2T. olive oil
- 1/2 small sweet onion chopped
- 1/2 green bell pepper chopped
- 2 or 3 stalks celery chopped
- 1 medium zucchini or summer squash chopped
- 1 28oz. can petite diced tomatoes undrained
- 1 can garbanzo beans drained and rinsed
- 1 cup fresh corn
- 2 T. red wine vinegar
- 1 t. sugar
- 2 T. chili powder
- 1/2 t. cinnamon
- 1/2 t. allspice
- 1/2 t. oregano
- 1/2 t. basil
- 1 t. cumin
- 1 t. parsley flakes
- 1 bay leaf
- 1/2 t salt
- 6 oz. beer (1/2 bottle)
- In a 4-6 qt. pot, saute onion, bell pepper, celery and squash in olive oil till tender, stirring occasionally. Stir in undrained tomatoes, corn, drained and rinsed garbanzos and remaining seasonings (not beer). Bring to a boil and simmer, covered about 15-30 min. Stir in beer and simmer uncovered till desired consistency.
