Garden Spiral Primavera
- 12 oz. pkg. RF garden spirals
- 1/4 c. olive oil
- 1/4 c. butter
- 1 medium onion, thinly sliced
- 1/2 lb. mushrooms, sliced
- 3 c. broccoli flowerets
- 1 medium zucchini, sliced and quartered
- 2 carrots, cut into thin julienne strips
- 1/3 c. white wine
- 1 tsp. basil
- 1 tsp. parsley flakes
- salt and pepper to taste
- 3/4 c. grated Parmesan cheese
- Cook spirals according to package directions.
- In large skillet, heat oil and butter.
- Add onion and garlic.
- Cook 2 to 3 minutes, stirring frequently.
- Add the remaining vegetables.
- Cook 3 more minutes, stirring frequently.
- Add wine and seasonings. Simmer 5 minutes or until tender.
- Toss spirals with vegetables. Add cheese.
- Serve immediately.
