White Bean Chicken Chipotle Chili
- 1 lb ground chicken
- 1 white onion
- 1 can White Northern beans (14.5 oz)
- 1 1/2 tsp cumin
- 1 tsp Ancho chili pepper
- 1 tsp Chipotle chili pepper
- 1/2 tsp oregano
- Pinch of ground bay leaves
- 1/2 tsp ground cinnamon
- 1 can chicken broth (14.5 oz)
- 2 - 4 sprigs of cilantro, finely chopped
- Sour cream
- Fresh cilantro
- Shredded cheese (optional)
- In a large saucepan, saute onions and ground chicken in a tablespoon of butter or olive oil until thoroughly cooked. Add can of white northern beans to the mixture and simmer on medium heat for 8 - 10 minutes, or until almost boiling. Add cumin, ancho and chipotle spices, oregano, bay leaves and cinnamon. Add 1 can of chicken broth and bring to a boil. Cover saucepan and let simmer for another 5 minutes. Serve with a dollop of sour cream and garnish with fresh cilantro. Makes 2 large bowls. Enjoy!
