Quiche-A-Roni

  1. Prepare Rice-A-Roni, using 2 1/2 cups water and cook as directed on package.
  2. Cool.
  3. Spoon Rice-A-Roni into a 10-inch buttered quiche pan or pie plate and mold up sides to form a shell.
  4. In a small frying pan, saute onions and mushrooms in 2 tablespoons butter.
  5. Combine onions, mushrooms, cheese, half and half, eggs, nutmeg, salt and pepper; pour into shell.
  6. Top with bacon.
  7. Bake at 375u0b0 for 35 minutes or until set.
  8. Cool 5 minutes and cut into wedges.
  9. Makes 6 servings.
