Quiche-A-Roni
- 1 pkg. chicken flavor Rice-A-Roni
- 1/4 c. chopped onions
- 1/4 lb. mushrooms, sliced
- 2 Tbsp. butter
- 2 c. grated Swiss cheese
- 1 1/2 c. half and half
- 3 eggs, beaten
- 1/8 tsp. nutmeg
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 6 slices bacon, fried and crumbled
- Prepare Rice-A-Roni, using 2 1/2 cups water and cook as directed on package.
- Cool.
- Spoon Rice-A-Roni into a 10-inch buttered quiche pan or pie plate and mold up sides to form a shell.
- In a small frying pan, saute onions and mushrooms in 2 tablespoons butter.
- Combine onions, mushrooms, cheese, half and half, eggs, nutmeg, salt and pepper; pour into shell.
- Top with bacon.
- Bake at 375u0b0 for 35 minutes or until set.
- Cool 5 minutes and cut into wedges.
- Makes 6 servings.
