Quick, Delicious Apple-Cranberry Salad
- Salad:
- 1 large softball size Honey Crisp Apple
- 1 package approximately 2 cups fresh cranberries
- 1/2 cup walnuts, coarsely
- 1-4 Tablespoons of sugar, depending on your taste.
- Dressing:
- 2T canola oil
- 1T orange juice
- Freshly ground pepper, approximately 1/4 teaspoon
- Salt, approximately 1/2 teaspoon
- Wash and dry the Honey Crisp Apple, Wash the cranberries. Mix
- Dressing ingredients in a small bowl and set it aside to let the flavors meld.
- To make the salad: Coarsely chop 1/2 Cup walnuts, place in a bowl large enough to mix all the Apple-Cranberry Salad ingredients together. Cut apple into small dice, add to walnuts. Finely chop fresh cranberries, add to walnuts and apples.
- Stir and taste. If you use sugar, add 1 tablespoon at a time, stirring and tasting after each addition. Too much sugar detracts from the lovely taste of the apple. Stir in dressing.
- Apple-Cranberry Salad may be served immediately, or refrigerated until serving time.
