20 Minute Sweet And Sour Chicken
- 1 lb. boneless, skinless chicken, cut in cubes
- 2 Tbsp. vegetable oil
- 1 clove garlic
- 1 c. green pepper strips
- 1 c. carrot strips
- 1 c. onion, quartered
- 1 1/4 c. chicken bouillon
- 1/4 c. soy sauce
- 2 Tbsp. dry sherry
- 3 Tbsp. vinegar
- 3 Tbsp. brown sugar
- 1/2 tsp. ginger
- 1 (8 oz.) can chunk pineapple in juice
- 1 1/2 c. Minute rice
- Brown chicken in oil and garlic.
- Add vegetables and stir-fry 1 minute or until crisp-tender.
- Combine bouillon, soy sauce, sherry, vinegar, brown sugar, ginger and pineapple with juice.
- Bring to boil.
- Stir in Minute rice.
- Cover.
- Remove from heat and let stand 5 minutes.
- Stir in chicken and vegetables and serve immediately. Serves 4.
