Tilapia Calypso

  1. Saute onion, peppers and garlic in oil and butter until tender; reserve.
  2. Arrange each fillet on a square of aluminum foil.
  3. Season each fillet with 1 tsp. jerk seasoning and cover with 1/2 cup onion mixture and 1 tbsp. cilantro. Top with one orange slice.
  4. Wrap foil around fillet and seal like a pouch.
  5. Bake packets at 375u0b0 F. for 10 minutes.
  6. Open foil packets carefully and transfer fillet to serving plate.
  7. Note: Packets can be prepared ahead and refrigerated up to 4 hours before cooking.
