Christmas Eve Buffet Supper
- 1/2 c. butter or margarine
- 3/4 c. chopped onion
- 3/4 c. chopped green pepper
- 1 (6 oz.) jar sliced mushrooms with liquid
- 2/3 c. all-purpose flour
- 2 tsp. salt
- 1/4 tsp. pepper
- 4 c. milk
- 1 1/2 c. shredded sharp American cheese
- 1 Tbsp. lemon juice
- 1 tsp. powdered dry mustard
- 1/2 tsp. Worcestershire sauce
- 1 (12 oz.) can frozen cooked lobster meat
- 1 (12 oz.) pkg. frozen cooked crab meat
- 1 (8 oz.) pkg. fresh or frozen shrimp, cooked
- Melt butter in saucepan over moderate heat.
- Stir in onion, green pepper and strained mushrooms.
- Cook until onion is soft (about 5 minutes), stirring occasionally.
- Remove from heat; blend in flour, salt and pepper.
- Return to heat; stir in milk gradually, continuing to cook until thickened, stirring constantly.
- Stir in cheese, lemon juice, mustard and Worcestershire sauce until cheese melts.
- Break lobster and crab meat and add, with shrimp, to sauce.
- Heat mixture to boiling point.
