Siracha Meatloaf
- 1 1/4 cups Ketchup
- 1/4 cup Siracha
- 1/2 cup Onion chopped
- 1/2 cup Carrots chopped
- 1/2 cup Celery chopped
- 3/4 cup Parsley
- 2 teaspoons Garlic minced
- 1/2 teaspoon Salt
- 1/4 teaspoon Pepper
- 3/4 cup Panko Bread crumbs
- 1 Egg beaten
- 1 pound Ground Beef
- 1 pound Ground Pork
- 6 Lettuce leafs
- 1 Large Tomato sliced
- 1 Red Onion sliced
- 8 slices Crusty Country Bread
- 1. Preheat oven to 375u0b0 and line a sheet pan with parchment paper. In a small bowl, mix together ketchup and Sriracha and set aside
- 2. In the bowl of a food processor add onion, carrot, celery, parsley and garlic. Pulse until combined, then transfer to a large mixing bowl. Add salt, pepper, panko and egg and mix together with a spoon. Add meat and 1/2 cup Sriracha-ketchup sauce, then mix by hand until just incorporated
- 3. Divide meatloaf into 4 equal parts. Shape each into a rectangle about 1" high and place on parchment paper. Spread 1 tablespoon sauce on each piece using back of a spoon or a brush, then bake for 20 minutes.
- 4. Assemble sandwiches by layering lettuce, tomato, onion and meatloaf between 2 pieces of bread. Serve with remaining sauce.
