Spicy Pumpkin Loaf
- 2 1/2 c. all-purpose flour
- 1/2 c. toasted wheat germ
- 1 Tbsp. baking powder
- 1 1/2 tsp. salt
- 2 tsp. ground cinnamon
- 1/2 tsp. baking soda
- 1/2 tsp. ground nutmeg
- 1/2 tsp. ground ginger
- 1/4 tsp. ground cloves
- 1 1/2 c. granulated sugar
- 1/2 c. vegetable oil
- 2 large eggs
- 1 1/2 c. canned pumpkin
- 1/4 c. milk
- 6 oz. semi-sweet chocolate chips (if desired, for extra flavor!)
- Heat oven to 350u0b0.
- Grease a 9 x 5 x 3-inch loaf pan.
- Put all ingredients in a large bowl; mix with electric mixer or by hand. After thorough mixing, spread batter in prepared pan.
- Bake for 60 to 65 minutes, or until wooden toothpick inserted in center comes out clean.
- Remove pan from oven; place on wire rack to cool for 10 minutes.
- Remove loaf from pan; cool completely on wire rack. Tightly wrapped in aluminum foil, loaf keeps well in refrigerator or freezer.
- Makes 1 loaf.
