Wholesome Wholewheat And Flax Banana Date Bread

  1. Butter and dust with flour a medium loaf pan or 8-inch square cake pan.
  2. Preheat oven to 350 degrees. Place dates in a deep bowl and pour hot water over, allowing the dates to soak for about 10 minutes or until softened.
  3. Meanwhile, whisk together in a large bowl the dry ingredients: flours, flax, salt, baking powder, cinnamon.
  4. Using an immersion blender, blender or food processor, puree the dates until liquidized (they should have the same consistency as mashed bananas). Add the bananas and blend until somewhat smooth (a few lumps are okay). Add the eggs, vegetable oil and milk and blend until everything is combined.
  5. Pour the liquid mixture into the dry ingredients and mix until just combined.
  6. Pour the batter into your prepared pan. Bake at 350 degrees until golden brown and a toothpick inserted in the middle comes out clean. This takes about 50 minutes to an hour in a loaf pan and 40 - 45 minutes in a square cake pan.
