Chaomian
- 2 cakes dried noodles
- 150g bean sprouts
- salt to taste
- 4 scallions
- 1.5 tbs peanut oil
- 1.5 tbs soy sauce (a mix of and )
- 2 tbs broth
- 1.5 tsp ma la oil
- Boil water in a wok. Turn heat off and add noodles. Agitate noodles w/chopsticks to separate noodles. Remove noodles, drain, and reserve.
- Mix broth & soy sauce in a bowl and reserve.
- Cut scallions into 1 inch segments & julienne.
- Wash bean sprouts. Heat wok to high, add oil, add sprouts & salt, fry a little & remove.
- Heat wok to medium & add oil. Add noodles and fry, while mixing & separating with chopsticks. Continue to mix/separate for the duration of the frying.
- Mix in broth/soy sauce mixture into the noodles a tsp at a time.
- Add sprouts and scallions, mix in with noodles.
- Remove from wok and serve. Add more soy sauce if you'd like. Put ma la oil on the side.
