Ida'S Chili
- 2 to 2 1/2 lb. beef, cut into cubes
- 1 clove garlic, minced
- 1 small onion, chopped
- 1/4 c. chopped celery
- 1/4 c. chopped carrots
- 2 to 3 c. beef stock
- 1 tsp. dried oregano
- 1 tsp. cumin
- 2 bay leaves, crushed
- 1/3 c. tomato paste
- 1 to 2 red peppers
- salt to taste
- 3 Tbsp. oil
- 2 Tbsp. flour
- 2 Tbsp. chili powder and 2 c. beans
- Brown beef in a large skillet with oil.
- Remove.
- Lightly brown onion, celery, carrots and garlic.
- Add oregano, cumin, bay leaves, flour, tomato paste and chili powder.
- Cook about 2 minutes.
- Add beef and stock.
- Bring to boil.
- Reduce heat to a simmer and add red pepper and salt to taste.
- Cook until beef is tender.
