Manchego Cheese Fritters
- Olive Oil, for deep-frying
- 2 egg whites
- 4 oz mature Manchego cheese, finely grated
- 2 oz fresh bread crumbs
- About 1 tablespoon finely chopped herbs, such as parsley, chives, and thyme
- paprika
- Salt and Pepper
- 1. Heat the olive oil to 360, or until a cube of bread browns in 30 seconds.
- 2. Meanwhile, in a bowl, whisk the egg whites until stiff but not dry. Using a large metal spoon, lightly fold in the grated cheese, breadcrumbs, and herbs. Season with salt, pepper, and paprika. Form the cheese mixture into small walnut-sized balls.
- 3. Add the cheese balls to the hot oil in batches, taking care not to overcrowd the pan, and fry for about 3 minutes until golden. When the fritters are ready, transfer them to kitchen paper with a slotted spoon to drain. Serve hot.
