Fat-Free Carrot Cake
- 3 c. cake flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1/2 tsp. salt
- 1 (16 oz.) can pear halves (unsweetened), drained and pureed
- 1 1/4 c. brown sugar
- 3 egg whites
- 1 Tbsp. grated orange rind
- 2 c. shredded carrots
- 3 Tbsp. orange juice
- 1 c. fresh strawberries
- 1 tsp. confectioners sugar
- In a large bowl, combine flour, baking powder, soda, cinnamon, nutmeg and salt.
- Puree pears; beat with brown sugar and egg whites.
- Add to flour mixture with orange rind and orange juice, until just moist.
- Don't overbeat.
- Fold in chopped strawberries and shredded carrots.
