Adzuki Bean Soup

  1. 1. Rinse adzuki beans well, then drain
  2. 2. Saute onion, garlic & celery
  3. 3. Add water and bring to a boil
  4. 4. Add all ingredients and boil rapidly for 15 minutes
  5. 5. Reduce to simmer, covered, for two hours
  6. 6. You may puree fully or partially for smoother soup but I prefer it just as is
  7. 7. Serve with slices of good bread!
