Sunday Supper

  1. OLD-FASHIONED MEAT LOAF
  2. Cook onion, garlic, celery carrot, and scallion in butter over moderate heat, stirring, for 5 minutes. Cover, stirring occasionally, until carrot is tender. Stir in Salt, pepper, Worchestershire sauce and 1/3 cup of the ketchup and cook, stirring, 1 minute.
  3. In a large bowl, combine all ingredients but the last 1/3cup ketchup. In a shallow pan form mixture into a 10X5 in oval loaf.Spread remaining ketchup over top.
  4. Bake at 350 for 1 hour or until internal temperature reaches 155 degrees.
  5. SCALLOPED POTATOES
  6. In a heavy sauce pan, melt butter over low heat and whisk in flour. Cook "roux" whisking for 3 minutes and add broth in a stream. Bring to a boil and continue whisking, about 2 minutes, until thickened slightly. Remove from heat and whisk in cheese until melted. Add salt and pepper.
  7. Peel potatoes and slice about 1/8 inch thick. In buttered baking dish make 5 layers each of potatoes and sauce, beginning with potatoes and ending with sauce.
  8. Sprinkle bread crumbs on top and bake uncovered at 350 degrees for 1 hour or until potatoes are tender and top is golden.
