Spicey Tomato And Pepper Pasta
- 1/4 cup olive oil
- 4 garlic cloves, chopped
- one medium onion, halved, then sliced
- two hot banana peppers, chopped (with or without viens and seeds
- depends on how hot you like it)
- 6-8 fresh plum tomatoes, or canned, skinned and chopped
- salt, pepper to taste
- 1/2 tsps oregano
- Fresh spegettine pasta for four
- In a large sauce pan, sautee garlic and onion until tender; 3-5 minutes on medium heat. Add peppers, salt, pepper and oregano. Sautee for a another 3-5 minutes, until tender...do not brown.
- Add tomatoes, mix and bring to a boil. Lower heat to a simmer, cover and cook for another 20 to 30 minutes.
- Prepare pasta, drain and serve in large serving dish. Pour tomato-pepper sauce over pasta, and top with fresh paresian grated cheese.
- Serve with crusty Italian bread, to soak up the delicious sauce.
