Spicey Tomato And Pepper Pasta

  1. In a large sauce pan, sautee garlic and onion until tender; 3-5 minutes on medium heat. Add peppers, salt, pepper and oregano. Sautee for a another 3-5 minutes, until tender...do not brown.
  2. Add tomatoes, mix and bring to a boil. Lower heat to a simmer, cover and cook for another 20 to 30 minutes.
  3. Prepare pasta, drain and serve in large serving dish. Pour tomato-pepper sauce over pasta, and top with fresh paresian grated cheese.
  4. Serve with crusty Italian bread, to soak up the delicious sauce.
