White Chocolate Macademia Cookies
- 1/2 cup butter, room temperature & cut into 4 pieces
- 1/3 cup sugar
- 1/3 cup brown sugar
- 1 large egg
- 1 tsp vanilla
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 6 1/2 ounces white chocolate chips
- 3/4 cup macadamia nuts, halved or coarsely chopped
- Preheat oven to 375. Lightly grease 2 large cookie sheets. Blend butter, sugars, egg, and vanilla until fluffy (scrape bowl once if needed). Mix flour, baking soda, and salt. Add to butter mixture and mix until just combined (DO NOT OVER MIX). Turn in chocolate chips and nuts. Drop large spoonfuls (between 1/8 cup to 1/3 cup, depending on how large of cookies you want) about 2 inches apart on the prepared cookie sheets. Bake until light brown around edges, about 10-15 minutes.
