Fluffy Coconut Pudding
- 1 envelope unflavored gelatin
- 1/4 c. cold water
- 3 Tbsp. boiling water
- 3 egg whites
- 1/8 tsp. salt
- 6 Tbsp. sugar
- 1/2 tsp. vanilla extract
- 1 c. whipping cream
- 2/3 c. canned moist coconut
- Soften
- gelatin
- in
- cold
- water.
- Add boiling water and stir until
- dissolved.
- Cool
- to
- room
- temperature.
- Beat egg whites with
- salt until frothy.
- Add sugar, one tablespoon at a time and beat well after each addition.
- Continue beating until mixture holds
- a
- peak
- when beater is lifted..
- Slowly beat in gelatin. Add
- vanilla to whipped cream.
- Mix and fold into egg whites. Fold in coconut.
- Cover and chill at least 4 hours.
