Fluffy Coconut Pudding

  1. Soften
  2. gelatin
  3. in
  4. cold
  5. water.
  6. Add boiling water and stir until
  7. dissolved.
  8. Cool
  9. to
  10. room
  11. temperature.
  12. Beat egg whites with
  13. salt until frothy.
  14. Add sugar, one tablespoon at a time and beat well after each addition.
  15. Continue beating until mixture holds
  16. a
  17. peak
  18. when beater is lifted..
  19. Slowly beat in gelatin. Add
  20. vanilla to whipped cream.
  21. Mix and fold into egg whites. Fold in coconut.
  22. Cover and chill at least 4 hours.
