Clam Puffs
- 2 cans sea watch chopped clams, juice drained and reservedd
- 2/3 cup butter
- 2/3 cup onion minced
- 2/3 celery minced
- 14 eggs
- 6 cups breadcrumbs
- 1 pint cream
- 1/3 cup lemon juice
- 2 teaspoons parsely chopped
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon white pepper
- 1 cup milk
- 2 cups flour
- Puff mixture:
- Saute onion and celery until transparent drain off liquid. In a large bowl combine clams and juiced celery onion lemon juice parsley spiices cream 2 eggs and 2 cups of breadcrumbs. Chill for 1 hour
- Eggg coating:
- Combine remaining eggs and 1 cup milk blend together.
- Form puff mixture into silver dollar size balls. Roll in flour dip into egg mixture coat with remaining breadcrumbs. Deep fry for appoximately 10 minutes. Serve warm.
