Oatberry Yogurt Cookies
- -1/2 cup vanilla nonfat yogurt
- -1/2 cup granulated sugar
- -1/2 cup packed brown sugar
- -1/4 cup (1/2 stick) unsalted butter, softened
- -1/4 cup canola oil
- -1 teaspoon vanilla
- -1 3/4 cup all purpose flour
- -1 cup uncooked rolled oats
- -1/2 teaspoon baking soda
- -1/2 teaspoon salt
- -1 cup frozen blueberries
- Preheat oven to 375 degrees F
- In a mixing bowl, combine, yogurt, sugars, butter, oil and vanilla until blended.
- Add flour, baking soda, oats and salt, mix until smooth.
- Gently stir in blueberries.
- Drop by rounded tablespoons onto an un-greased cookie sheet 2 inches apart.
- Bake for 14-16 minutes, or until cookies are beginning to brown.
- Let cool for one minute before moving from cookie sheet to a cooling rack.
- Store in an airtight container to maintain freshness.
