Apple Strudel
- 3 medium apples, cored, peeled and thinly sliced
- 1/2 cup sugar
- 1/4 cup chopped walnuts (optional)
- 1/4 cup raisins (optional)
- Pinch of cinnamon
- Grated rind of 1 lemon
- 3 tablespoons melted butter
- 1/2 cup dry cake crumbs
- 3 sheets phyllo dough
- Mix apples, sugar, walnuts, raisins, cinnamon and lemon rind. Place one sheet of phyllo dough on a damp towel, and brush with butter. Sprinkle with cake crumbs. Place second sheet over first and repeat procedure. Place third sheet over second and repeat procedure. Spread filling in the middle of the dough, down the entire length, in a 3-inch wide strip. Lift towel gently away from you to form a roll. Pick up entire towel, cradling the strudel, and deposit on a buttered pan. For extra crispness, brust top lightly with water, then with melted butter or beaten egg yolk. Puncture top with a fork in several places. Bake in a preheated 350F oven about 35 minutes or until golden brown. Slice and serve while still warm.
