Garlic Chicken And Red Potatoes
- 3/4 C. Crushed Corn Flakes
- 3/4 C. Flour
- 1 Tbsp. Seasoned Salt
- 1 Tbsp. Cajun Spice
- Pepper to taste
- 2 to 3 lbs boneless, skinless Chicken Breast
- 1 lb. Bacon
- Enough Red Potatoes that will, when cut, cover the chicken in a 12" or 14" Dutch Oven.
- 1 C. melted Butter
- 3 cloves of pressed Garlic
- Cut the chicken into desired size cubes.
- Wash and cut potatoes into bite size cubes.
- Mix dry ingredients in a bowl and bread the chicken.
- Brown the chicken in oil in a frying pan to sear the breading to the meat.
- Cut bacon into small pieces and cook in the Dutch Oven.
- Remove the bacon, leaving the grease in the oven to help prevent sticking.
- Place the chicken in the Dutch Oven with 9 cloves of Garlic.
- Place the potatoes on top of the chicken in an even layer.
- Melt the cube of butter and crush 3 cloves of garlic into it.
- Pour the butter/garlic over the potatoes.
- Put the bacon over the potatoes.
- Cook at 300 - 325 degrees for approx 45 minutes or until the potatoes are fork tender.
