One Pounder Pizza
- 4 cups flour (unbleached)
- 1 package fast rise yeast
- 1 1/3 cup water warmed to yeast package dirrections
- 2 tablespoons olive oil
- tsp. teaspoon salt
- 1 package sage sausage (jimmy dean)
- 1 pound mushrooms sliced 1/4 ' thick
- 1 can pizza sauce chunky tomato kind (16 oz)
- 1 pound scamorza or motzarella cheese shreaded
- 1 handful parmagon cheese (not the canned stuff) grated to cover before cooking
- add a light teaspoon white sugar and roughly 1 tablespoon sifted flout to heated water and add dry yeast. stirr and cover water surface with sifted flour. let set for 10 min.
- In large bowl combine flour, salt and olive oil. Add yeast water and kneed untill smooth. put back into bowl, cover with wet towel, let rise for approx. 90 min.
- brown sausage and break into small chunks. Drain and remove from pan.
- in sausage drippings saute mushrooms till lightly brown.
- When dough is ready, spead corn meal on pizza peel (giant pizza spatula) and form pizza crust.
- wipe olive oil on top surrface of dough. cover to within and inch of the edge with sauce.
- distrivute mushrooms and then sausage. top with shredded cheese and grated parmagan.
- cook on preheated stone in 400 deg. f oven for 20 to 25 min - till browning cheese in center.
- remove with peel and let set for 5 min. slice and enjoy
