Applesauce Fruit Cake
- 1 c. butter or margarine
- 1/2 c. chopped dates
- 1 1/2 c. sugar
- 1/2 c. figs, chopped
- 2 tsp. cinnamon
- 1/2 c. chopped mixed candied fruit
- 1 tsp. cloves
- 1/2 c. chopped nuts
- 1 tsp. allspice
- 2 eggs
- 3 c. flour
- 2 c. applesauce
- 1/2 tsp. salt
- 1 1/2 tsp. soda
- 1 c. raisins
- Cream the butter or margarine.
- Add sugar gradually with spices.
- Cream until light. Sift flour, salt and soda.
- Dredge fruit in 1/2 cup flour. Beat eggs until light. Add alternately with remaining flour, stirring until well blended. Stir in dredged fruit, nuts and applesauce.
- Bake in greased pan in slow oven at 325u0b0 for about 1 1/2 hours or until done, depending on size of pan.
- I use bread pans.
