Asparagus Rollups
- One lb. sliced ham slightly on the thick side, preferably square.
- Asparagus I prefer frozen but you can use fresh. Two boxes.
- One lb. cream cheese.
- Horseradish to taste.
- Cook your asparagus according to directions, dry on paper towels.
- Take softened cream cheese and mix in a couple of tablespoons of horseradish to taste, I like to be able to lightly taste the horseradish.
- Lay out your slices of ham and spread a light layer of the horseradish cream cheese mixture on each slice, if the ham is about 4"x6" cut it in half.
- Take a couple of pieces of asparagus and lie them at one end of the horseradish spread ham and roll it up, lying the seam side down on a platter.
- Place in the refrigerator for about 20 minutes until the horseradish-cream cheese mixture chills.
- Cut the rolls into about 1 inch slices, put in a toothpick and serve.
