Comfort Food Risotto

  1. saute onion/shallot and garlic in the oil just until shiny and slighty soft. add ricecontinue to saute for two to three minutes unitl rice is shinly and wet looking. Slowly ladle in broth one ladle at a time until absorbed and rice is soft. about 20 min. let cook until almost all liquid is absorbed. beat yolk into cream and add lemon juice and zest as well as salt and pepper. add slowly to rice mixture and cook until thick and creamy. spoon into bowl top with a lemon twist and sprig of parsley and enjoy.
