New England Apple Cake
- 1/2 c. margarine or butter
- 1 c. sugar
- 1 c. brown sugar
- 3 eggs
- 2 tsp. vanilla extract
- 2 1/4 c. all-purpose flour
- 2 1/4 tsp. baking soda
- 1 tsp. salt
- 2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 7 c. coarsely chopped cooking apples, loosely packed
- 3/4 c. chopped walnuts
- 1 Tbsp. confectioners sugar
- Heat oven to 350u0b0.
- In large bowl, cream together margarine and both sugars.
- Beat in eggs and vanilla until well blended.
- In medium bowl, combine next 5 ingredients.
- Add to creamed mixture; stir to combine thoroughly.
- Stir in apples and walnuts.
- Spoon into greased 10-inch Bundt or tube pan.
- Bake for 50 to 60 minutes or until an inserted toothpick comes out almost clean. (Because of the apples, the toothpick will be moist.)
- Cool on wire rack for 10 minutes; turn out onto serving dish.
- When completely cooled, dust with confectioners sugar.
- Serves 16.
- Refrigerate leftovers.
