Ginger Almonds
- 1/4 cup sugar
- 1 1/2 tsp kosher salt
- 1/2 - 1 tsp cayenne pepper
- 1/2 tsp ginger powder
- 2 1/2 cups whole almonds
- 1 - 2 tbsp finely minced candied ginger
- 1 tbsp water
- 1 tbsp honey
- 1 tsp olive oil
- 1. Preheat oven to 350 deg F. Spread almonds on a baking sheet and toast for about 15 - 20 min stirring often.
- 2. Stir together the sugar, salt, cayenne pepper, and ginger in a small bowl and set aside.
- 3. In a pan, heat the water, honey, and olive oil until the mixture boils. Add the toasted almonds and stir until they are well coated.
- 4. Add the sugar mixture and the minced ginger and stir well over medium heat. Allow the sugar to melt and carmelize over the nuts.
- 5. Spread onto a baking sheet lined with parchment, and allow to cool.
