Quick Taco Pie
- 2 lb. ground beef
- 1/2 c. chopped onions
- 1 (1 1/4 oz.) pkg. taco seasoning mix
- 3/4 c. biscuit mix
- 1 1/2 c. milk
- 3 eggs
- 1 c. shredded Cheddar cheese
- 1/4 head iceberg lettuce, shredded
- 1 tomato, diced
- 1/3 c. sliced ripe olives
- sour cream (optional)
- Cook and stir ground beef and onions in skillet until beef is brown; drain.
- Stir in seasoning mix; spoon into greased 8-inch square dish.
- Set aside.
- Beat biscuit mix, milk and eggs with wire whisk or hand beater until almost smooth, about 1 minute. Pour over meat.
- Bake at 400u0b0
- for 25 to 30 minutes, or until center is set.
- Sprinkle with cheese; bake 2 minutes more until cheese is melted.
- Cool for 5 minutes; garnish with lettuce, tomatoes, olives and, if desired, sour cream.
- Yields 6 to 8 servings.
