Quick Taco Pie

• 2 lb. ground beef
• 1/2 c. chopped onions
• 1 (1 1/4 oz.) pkg. taco seasoning mix
• 3/4 c. biscuit mix
• 1 1/2 c. milk
• 3 eggs
• 1 c. shredded Cheddar cheese
• 1/4 head iceberg lettuce, shredded
• 1 tomato, diced
• 1/3 c. sliced ripe olives
• sour cream (optional)

1. Cook and stir ground beef and onions in skillet until beef is brown; drain.
2. Stir in seasoning mix; spoon into greased 8-inch square dish.
3. Set aside.
4. Beat biscuit mix, milk and eggs with wire whisk or hand beater until almost smooth, about 1 minute. Pour over meat.
5. Bake at 400u0b0
6. for 25 to 30 minutes, or until center is set.
7. Sprinkle with cheese; bake 2 minutes more until cheese is melted.
8. Cool for 5 minutes; garnish with lettuce, tomatoes, olives and, if desired, sour cream.
9. Yields 6 to 8 servings.
