Swedish Meatballs
- Meatballs:
- 4 Tbl Butter
- 2/3 cup Minced Onion
- 2 eggs
- 1/2 cup milk
- 1 cup fresh breadcrumbs
- 1 1/2 tsp salt
- 4 tsp sugar
- 1 tsp allspice
- 1/2 tsp nutmeg
- 2 1/2 lb ground chuck
- Sauce:
- 4 Tbl butter
- 6 Tbl flour
- 2 tsp sugar
- 2 1/2 tsp salt
- 1/4 tsp pepper
- 2 cups water
- 1 1/2 cups light cream
- Saute onion in butter. Mix beaten egg, milk and crumbs. Let sit for 5 minutes. Add salt, sugar, allspice, nutmeg, meat and onion. Blend well. Make 1" meatballs, bake on cookie sheet in 375 degree oven for about 18 minutes, turning once halfway through. Pour off drippings for sauce.
- In a large saucepan pour drippings. Stir in flour, sugar, salt, pepper. Slowly add water and cream and heat over medium while stirring until think. Pour over meatballs.
- Makes about 48 meatballs.
