Turkey Croquettes

  1. Saute ground turkey until well done, breaking up into fine pieces.
  2. Melt butter, blend in flour; add milk. Cook & stir until thick & bubbly. Add meat & onion. Cover & chill thoroughly.
  3. Divide into 12 balls. Roll in crumbs; dip into mixture of beaten egg & 2T. milk. Roll in crumbs again, shaping into a cone. Fry in deep hot oil for 1 1/2 - 2 min. Serve with supreme sauce.
  4. Sauce:
  5. Melt butter, blend in flour. Slowly add broth, S & P. Bring to a boil; boil for 2 min. Add cream. Just before serving, stir in yolk and a little lemon juice, dash of nutmeg.
