Turkey Croquettes
- 1 lb. ground turkey
- 3 T. butter or margarine
- 1/4 c. flour
- 3/4 c. milk
- 1 tsp. grated onion
- Supreme Sauce:
- 2 T. butter
- 3 T. flour
- 1 c. chicken broth
- S & P
- 1/3 c. cream (I use fat-free half & half)
- 1 egg yolk
- lemon juice / nutmeg
- Cornflake crumbs or fine bread crumbs
- Saute ground turkey until well done, breaking up into fine pieces.
- Melt butter, blend in flour; add milk. Cook & stir until thick & bubbly. Add meat & onion. Cover & chill thoroughly.
- Divide into 12 balls. Roll in crumbs; dip into mixture of beaten egg & 2T. milk. Roll in crumbs again, shaping into a cone. Fry in deep hot oil for 1 1/2 - 2 min. Serve with supreme sauce.
- Sauce:
- Melt butter, blend in flour. Slowly add broth, S & P. Bring to a boil; boil for 2 min. Add cream. Just before serving, stir in yolk and a little lemon juice, dash of nutmeg.
