Dori'S Summer Dip
- Main Dip:
- 2 cans black beans (drained & rinsed)
- 2 cans shoepeg or sweet white corn (drained)
- 1 cup Monterey Jack cheese (shredded)
- 1 cup sharp Cheddar (shredded)
- 1/2 to 3/4 cup green onion (chopped)
- 2 small or 1 large green pepper (chopped)*
- Large bunch of cilantro (chopped finely)
- *can also use yellow or red peppers to add color
- Dressing:
- 1 1/2 cup medium salsa
- 1/2 cup olive oil**
- 1 tbsp. garlic (chopped)
- Juice of 2 limes
- 2 tsp. cumin
- Salt & pepper to taste
- **can be reduced to 1/4 cup or eliminated.
- Put all main ingredients in a large bowl. Add or take away as you like. If you like, add black chopped olives. Mix dressing together and pour over main mix. The longer you let it sit, the better it tastes.
