Jambalaya
- 1 pound hot Italian Sausage links, cut into 1/2 inch slices
- 1 medium Green Pepper, chopped
- 1 medium Onion, chopped
- 2 ribs Celery, chopped
- 2 cups uncooked long grain rice
- 2 tablespoons chopped garlic
- 2 teaspoons Cajun Seasoning
- 2 cups Chicken Broth
- 1 can (14.5 oz) Crushed Tomatoes
- 1 can (14.5 oz) Mexican Stewed Tomatoes
- 1/2 pound pre-cooked frozen Chicken Strips, thawed and chopped
- 1/2 cup chopped green onions
- Heat large saucepan over medium high heat. Add sausage, green pepper, onion, celery, and garlic. Saute until sausage is brown and onion is tender. Drain fat. Add rice and Cajun Seasoning. Saute until rice is golden, about 2-3 minutes.
- Add broth and tomatoes. Stir, and bring to a boil. Reduce heat, cover, and simmer about 15 minutes, until rice is almost done. Add chopped chicken and green onions. Simmer, covered until rice is completely done and remaining liquid is absorbed.
