Potato-Onion Bake
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1 small sprig thyme
- salt and pepper to taste
- 1 c. grated Parmesan cheese or Cheddar cheese
- 1/2 small onion, peeled and minced
- 2 1/2 c. hot milk
- 1/2 small bay leaf
- nutmeg
- Melt butter in heavy saucepan or skillet.
- Add onion; cook over low heat, stirring, until onion is soft but not browned. Blend in flour; cook, stirring constantly, over low heat for 3 minutes, or until flour is thoroughly cooked.
- Add one-third of the hot milk; stir vigorously while cooking sauce over medium heat until thickened and it begins to bubble.
- Add remaining milk, thyme, bay leaf, salt, pepper and nutmeg to taste.
- Cook, stirring, until thickened and smooth.
- Stir in grated cheese; heat until cheese has melted.
- Strain through a fine sieve.
- Makes about 2 2/3 cups.
