Squirrel - Cajun Style
- 4 squirrels, cut in pieces
- 1 stick margarine
- 1 c. chopped onions
- 1/2 c. chopped green bell peppers
- 4 cloves garlic
- 1 Tbsp. Worcestershire sauce
- 1/2 c. Burgundy wine
- 1 Tbsp. chopped green onion tops
- 1 Tbsp. chopped parsley
- 1 (4 oz.) can mushrooms
- 1 Tbsp. flour
- salt
- pepper
- crushed red pepper
- Cut squirrels into 8 pieces each.
- Season with salt and pepper. Melt margarine and fry squirrels until brown or start to stick to pot.
- Add onions, bell peppers and garlic.
- When vegetables are soft, add a small amount of cold water and Worcestershire sauce. Cover pot and simmer for 1 hour.
- Stir well and add wine.
- Cook until tender.
