Fresh Strawberry Pie
- 1 pie crust (9 inch) -- baked
- 4 cups sliced strawberries
- 1 box sugar-free strawberry gelatin -- 3 oz
- 1 box vanilla pudding mix -- the kind you cook
- 1 1/2 cups boiling water -- for pudding mix
- 1/2 cup boiling water -- for jello
- 1 teaspoon lemon juice
- 4 ounces cream cheese -- softened
- 1 small Cool Whip(R) -- thawed
- Cook pudding mix and dissolve jello in hot water. Then mix and put in frigerator for 30 minutes. Put in lemon juice. Then put strawberries in mix and put in pie shell. Put in refrigerator for about 3 to 4 hours.
- For Topping; blend cream cheese and Cool Whip with 2 packets of splenda. Put around outer edge of pie and decorate with 8 whole strawberries.
