Minestrone
- 2 strips bacon, chopped
- 1 tsp. fresh garlic, minced
- 16 oz. tomatoes (undrained)
- 1/2 c. uncooked macaroni
- pepper
- 8 1/2 oz. red kidney beans
- Parmesan cheese
- 1/2 c. chopped onion
- 28 oz. chicken broth
- 10 oz. frozen mixed vegetables
- 1/2 tsp. basil
- 10 oz. white kidney beans
- chopped parsley
- Cook bacon in 4-quart saucepot 2 to 3 minutes, stirring occasionally.
- Add onion and garlic.
- Cook 3 to 5 minutes, until onion is tender.
- Stir in broth, tomatoes, veggies, macaroni and seasonings.
- Bring to boil.
- Lower heat and cook 12 minutes.
- Stir in beans and cook 2 minutes.
- Skim off foam.
- Sprinkle with parsley and Parmesan.
